Can you remember back to the days of when you first learned how to cook?

As I step back into time I see the younger version of myself, eager to help my Mom in the kitchen or to watch and learn as my Dad whipped up his “Famous Chocolate Mousse Pie” for Thanksgiving. I remember the time my Mom finally allowed me to “cook dinner all by myself”.

I have many fond memories and I can recall some of my accomplishments in the kitchen. However, I can’t help but giggle when I look back at some of the mistakes I made as well.

For instance a few specific memories come to mind – I was baking one of the first cakes I’d ever made ( I was probably 12 or so), I of course had the assistance of an adult near by but for the most part it was all me! I’d made plenty of cakes or cupcakes from box mixes. In my mind I literally thought – “Piece.Of.Cake.” Right? WRONG! Long story short – I  had misread the recipe and I accidentally added tablespoons of baking soda when it was only suppose to be teaspoons!

Yes, it’s safe to say this cake didn’t turn out!

haha…

Should I continue to embarrass myself?

ahhh…What the heck! Why not? I’m on a roll…

This time I was super excited to make my very first pie (I was about 14 at the time) with the help of my brother, I knew this was going to be the “best pie ever”. We did everything by scratch but (I’ll blame it on the excitement of it all) that I seriously forgot to put the crust in the oven to precook! Apple pie with uncooked crust?! What a bummer that was!

However, that was ages ago so I’m over it. I promise!

Well… maybe. ;)

We can all remember those first meals we were able to cook for ourselves and a grilled cheese sandwich was definitely one of my all time favorites.

They’re fast & simple to make and let’s not forget yummy too. Plus they turn out great every time!

(Hey! Be nice – baking is a whole-another-ball-game!)  ;)

So my point in all this??

Being that a grilled cheese sandwich is one of the first meals I ever learned to make.

It’s not surprising that – I still ENJOY preparing, cooking & eating one.

Just with  a “fancy” twist.

Okay, I’ve been rambling so I’ll cut to the chase – most of us know how to make a grilled cheese sandwich. Which means I won’t go into complete detail here because pictures speak a thousand words.

But for the sake of calling this post a recipe I will go ahead and give an ingredient list.

Ingredient list:

  • Some awesome bread of your choice!
  • Real Butter, Please.
  • Stone Ground Mustard
  • Provolone Cheese
  • Fresh Spinach
  • Sliced Tomatoes
  • Avocado

and you know the drill of throwing it all together and making what I like to call - “A Fancy Grilled Cheese Sandwich”.

So, what are you waiting for?

After all that I’m hungry.

Bon Appetit!

I love plain grilled cheese to this day. But from the looks of this fancy one I think I'd love this one even more. I must make this in the very near, very near future! Thanks for the recipe Erika!

I love getting creative with grilled cheese sandwiches. I've made so many different varieties from grilled cheese and tomato, grilled cheese with tuna salad to grilled cheese with pepperoni. Thanks so much for sharing this on Marvelous Mondays!
